What I did to Matty Matheson's Infamous Cheesy Citrus Refried Beans

Image
From Homestyle Cookery ,  Matty says this is a dish he makes for his vegetarian posse. It's essentially a straightforward bean dip with chopped onion, garlic, cheese and whatnot. What really called my name was that it has a generous amount of grapefruit juice stirred into the refried pinto beans. Matty says you can substitute any citrus, but grapefruit juice has that sour tang which leads to a really nice call and response in your mouth with the spiced beans (cumin/coriander/jalapeno).  You probably have everything you need to make this in your pantry already. Got a can of pintos? Pull it out. Got another can of already refried beans. Chop some onions and peppers. Splash of citrus, a few dashes of your favorite spices. Melt some cheeses in there. How To Recreate Alvin Zhou's "100 Hour Lasagna" (sort of)

About a week before Thanksgiving I happened upon a video of Alvin Zhou making what he calls 100 Hour Lasagna . The video itself is gorgeous and quite calming. Alvin makes adorable little owl noises when he's happy with how something looks. The lasagna though! The lasagna is a jaw-dropping wonder. I immediately thought, 'I HAVE TO MAKE THIS!!'. So, I grabbed pen and paper and sat down to watch the video again, and again, and again. See, Alvin doesn't tell you how many cups of mirepoix he dices, or how long to simmer the sauces, or what temperature to bake the whole thing at. I consulted with some books along the way. But here's what I think you need... For the short rib sauce: 3 1/2 - 4 lbs. beef short ribs (Alvin used 7 ribs, I used 11) 2 cups diced onion 2 cups diced carrot 2 cups diced celery 2 - 3 tbsp. olive oil 1 generous cup diced pancetta 2 tbsp. tomato paste 2 cups good red wine 1 cup port* (optional) 2 (28oz) cans crushed tomatoes or 2 (25 oz.) jars Mari
