What I did to Matty Matheson's Infamous Cheesy Citrus Refried Beans

 


From Homestyle CookeryMatty says this is a dish he makes for his vegetarian posse. It's essentially a straightforward bean dip with chopped onion, garlic, cheese and whatnot. What really called my name was that it has a generous amount of grapefruit juice stirred into the refried pinto beans. Matty says you can substitute any citrus, but grapefruit juice has that sour tang which leads to a really nice call and response in your mouth with the spiced beans (cumin/coriander/jalapeno). 

You probably have everything you need to make this in your pantry already. Got a can of pintos? Pull it out. Got another can of already refried beans. Chop some onions and peppers. Splash of citrus, a few dashes of your favorite spices. Melt some cheeses in there. Matty uses mozzarella. I didn't have that, so I used fontina and smoked gruyere. I have to admit that the fontina didn't entirely melt the way I was hoping it, leading to a tolerable, but not ideal, granular texture. So, maybe don't use that. Any melty cheese will do. But you know what you're doing, right? This isn't your first kitchen sink "big game" been dip.

I doubt you'll have leftovers to make bean and cheese burritos with, but you wouldn't be mad about it if ya did.
